Preheat oven to 400 and line a baking sheet with foil. Spray foil with nonstick cooking spray. Set aside.
Place cheetos into a food processor and process until fine crumbs, about 10 seconds. Remove and place into a shallow dish.
In a separate shallow dish, add 1 cup flour. In a third shallow dish, add eggs and milk and beat well.
Dredge chicken pieces into flour, egg wash mixture, and Cheetos, coating well on each side in each dish. Place onto a prepared baking sheet. Repeat until all chicken is coated.
Bake for 20-22 minutes or until crispy and the chicken is no longer pink and reaches an internal temperature of 165 on the largest piece. Serve immediately.
