Preheat the oven to 350 degrees and spread a small amount of vegetable oil (about a teaspoon) into the bottom of a loaf pan. Use a pastry brush to coat the bottom and sides of the pan with vegetable oil.
Crack 8 eggs in the loaf pan and place the loaf pan into a 9x13 baking dish.
Fill the large baking dish 2/3rds full of water.
Bake eggs for 30 minutes or until eggs are hard boiled.
Let eggs stand for 5 minutes before using a spatula to loosen the edge and remove the eggs from the pan.
Chop eggs as desired.
Note on timing - When we did this trick the second time using a different pan, our eggs took 40 minutes.Also, we did test this how with spray nonstick oil and it leaves some of the oil ON the eggs. That being said, the eggs slid out with no stick spray. Just be aware that the nonstick spray oil will settle while cooking and can be confused with the egg whites looking raw on top.
